Recipe
- 1 cup frozen raspberries
- ¾ cup unsweetened almond milk
- Juice of ½ lemon (about 1 tablespoon)
- Optional: zero-calorie sweetener of choice (stevia, monk fruit, or allulose)
Tips
1. Pour almond milk into the blender first so the frozen raspberries blend easily.
2. Use frozen raspberries for a thick texture. Fresh berries will need 3–4 ice cubes to compensate.
3. Fresh lemon juice is non-negotiable. Bottled juice has a duller flavor. Roll the lemon on the counter before cutting to release more juice.
4. Taste before adding any sweetener. You may not need it at all.
5. If using stevia, start with 1–2 drops or a pinch. For monk fruit or allulose, begin with ½ teaspoon.
6. Drink immediately or give the smoothie a vigorous shake before sipping, as the raspberry seeds and fiber will settle.
Nutrition Notes
Raspberries provide about 8 grams of fiber per cup, nearly one-third of the daily recommended intake, plus ellagitannins, antioxidants studied for anti-cancer properties.
Lemon juice delivers about 30% of the daily value for vitamin C per tablespoon, plus citric acid that may help prevent kidney stones.
Almond milk adds creaminess for only about 30 calories per cup, with added calcium and vitamin D when fortified.
