Recipe
- 1 cup kale (fresh, stems removed)
- 1 cup blueberries frozen
- 1 ripe pear (replaces banana for creaminess and natural sweetness)
- 1 cup almond milk unsweetened
- 1 tablespoon almond butter
- 2 tablespoons rolled oats
Tips
1. Add almond milk to the blender first, followed by the kale. This helps the greens break down before the frozen ingredients go in.
2. Remove tough kale stems before blending. They can be bitter and hard to fully break down. Baby kale is a great shortcut.
3. Use frozen blueberries for a thick texture. Fresh blueberries will create a thinner smoothie; add ice cubes if needed.
4. Grind the rolled oats into a fine powder in the blender before adding other ingredients for an even smoother result.
5. Add an extra ¼ cup of almond milk if you prefer a drinkable consistency instead of a spoonable one.
Nutrition Notes
Kale provides over 100% of the daily value for vitamins A, C, and K per cup, plus lutein and zeaxanthin for eye health.
Blueberries are rich in anthocyanins, which have been shown to improve memory and delay cognitive aging.
Pear offers a creamy texture and pectin fiber that supports digestive health.
Almond butter delivers monounsaturated fats, vitamin E, magnesium, and about 3–4 g of protein per tablespoon.
Rolled oats contain beta-glucan, a soluble fiber that lowers LDL cholesterol and provides steady-release carbohydrates.
Almond milk adds calcium and vitamin D (when fortified), important for bone health, with minimal calories.
